"South Lake Union’s popular cafe Rubinstein Bagels has eyes on a Capitol Hill expansion. According to Capitol Hill Seattle, the bagel shop is planning to take over the space formerly occupied by the Wandering Goose sometime this summer. Owner Andrew Rubinstein has been steadily building a following for five years with his long-fermented sourdough offerings, and earned some critical praise when the bagels started popping up at places such as Citizen, Moonshot Coffee, and Ethan Stowell’s Cortina. He eventually opened the first Rubinstein Bagels fixed location at the Via6 apartment complex in 2020, serving up a selection of rotating bagel flavors, sandwiches, and coffee, along with duck fat matzoh ball soup. It sounds like the Via6 bakery will remain the main operation, even when the Capitol Hill outpost arrives." - Gabe Guarente
