But if there’s one dish that simply has to live up to the hype it’s fresh oysters, and Flying Fish shucks them to the highest standards. It’s not a complicated plating: just a dozen halved bivalves on crushed ice. Good oysters are absolutely dependent on freshness, quality, and the knowledge of the staff, all of which Flying Fish maintains to an exacting standard.
