"Health-conscious diners may want to avert their gaze. I checked out Fat Shack Underground, the growing fast-food franchise's first Seattle location in Pioneer Square at 88 Yesler Way, and found a menu of proudly decadent late-night snacks — sandwiches stuffed with mozzarella sticks, jalapeno poppers, chicken fingers, fries, and basically anything one’s drunken heart desires; the dessert menu is largely deep-fried treats like cheesecake bites and Twinkies. Started in 2010 by a College of New Jersey grad as a small East Coast pop-up, the chain expanded to permanent outposts in Colorado and Texas, and after the founders appeared on Shark Tank landed a six-figure deal with Mark Cuban; this is the franchise's 15th location and its second in Washington (the other is in Bellingham). Because the Pioneer Square space is subterranean, the decor leans into that theme with historic pictures of Seattle, sports memorabilia, and local artwork, and there is beer and cider on tap from Washington and Oregon breweries. The restaurant is open 11 a.m.–1 a.m. Sun–Wed, until 3 a.m. on Thursdays, and until 4 a.m. on Fridays and Saturdays." - Gabe Guarente
