"Inside Spilt Milk, the Feller will be a creative pub-food operation overseen by executive chef Adam Wendt and will debut on April 2 with a menu of eight rotating items (the dry-aged burger and Wendt’s duck‑fat‑emulsified dark‑meat chicken nuggets will remain constants). Wendt, who helped open Bangers & Lace and previously ran the Delta where his burger was popular, will also feature pastries from Mindy Segal of HotChocolate, a gym shoe sandwich (a medley of meats tied to the South and West sides that he’s familiar with from a gym shoe tamale he made at the Delta), house-made pastrami using a secret brine and rub, and brisket smoked for eight hours then sous‑vide for 14. Wendt said, “This is the kind of stuff that I would want to eat while I’m drinking.” The renovated kitchen—which took longer than expected to meet current city standards—will generally stay open until 1 a.m., and Family Meal Mondays will resume after the Feller opens." - Ashok Selvam
