Hong’s playful touches (he called a kelp-soaked uni, scallop, and roe dish a “triple threat” before smoothly pivoting into a riff on Kansas City cuisine) make the meal feel personal, while his wife Erin’s management ensures everyone is looked after; the counter has plenty of regulars, including local chefs and bartenders.
