"I'm reporting that Jinya Ramen Bar is set to open Tuesday, August 7 at 11 a.m. in Pike & Rose; the 74-seat modern restaurant (910 Prose Street, North Bethesda, Md.) will house a sleek Suntory Toki machine used to whip up whiskey highballs—equipment only a handful of Jinya's roughly 30 U.S. locations carry. I'll also note the first 100 guests will be handed a free bowl of ramen and that a portion of opening-day proceeds will go to local food bank Manna Food Center. The LA-based enterprise specializes in Tonkotsu ramen, a pork-based broth slow-simmered for over 10 hours and finished with up to 25 toppings. For booze, I see they'll offer Japanese beers, Japanese-inspired cocktails, whiskey, sake, and wine, with beers coming from local breweries. The setup features a 10-seat bar and an 18-seat outdoor patio centered around a fire pit, and the location is projected to operate daily for lunch and dinner (Sunday–Thursday 11 a.m.–10 p.m.; Friday–Saturday 11 a.m.–11 p.m.) with happy hour daily from 4 p.m. to 7 p.m. I also recall Jinya entered the D.C. dining scene in 2016 with a flagship in Fairfax’s Mosaic District and opened an outpost in Logan Circle last summer." - Tierney Plumb
