"On an otherwise industrial-grey corner in downtown Pomona, the bright-pink, cactus-covered facade beckons like my bisabuela’s house in Tijuana, with an interior brimming with hanging pothos and religious-adjacent wooden furniture, and an older Mexican woman in the kitchen, apron on and wooden spoon in hand. It’s the only vegan Mexican spot in this area of eastern Los Angeles County, with a menu of tostadas, burritos, tacos, and more that can be made to accommodate gluten-free diners. The highly snackable tostaditas are lightly fried, coated in smooth refried beans, and generously piled with crunchy vegetables and fresh avocado; I order a cafe de olla (hot preferred, but iced is also available) at any time of the day or night, and I don’t knock the freshly fried chips and guacamole—my toddler has been known to finish off a whole plate by herself. Inland Empire punks line up with suit-clad attorneys from the nearby courthouse to order at the counter, where the hostess seems to know everyone and asks about your family; the space is casual, with disposable dishes and cutlery, plus a concha display and a chisme jar where diners can write down and submit their latest gossip. Insider tip: all the dishes come with mild salsa and pico de gallo by default, but you can ask for the chef’s personal salsa, which makes even the most heat-seeking dining companions start to sweat and reach for the horchata." - Sarah Medina
