"I’ve followed the Kuppers’ Twisted Gyros since they launched as a traveling food cart: chefs Widi and Jason Kupper—both with fine-dining pedigrees—built a menu that reflects their courtship around street food, stuffing pitas with chicken shawarma and lamb while pulling from a wider culinary canon with items like a bulgogi beef pita with crispy onion, vegetables, and gochujang sauce. Over the years they’ve offered playful specials such as a “piña colada” shrimp marinated in rum and fried with a coconut-bolstered dredge and a bratwurst with cabbage‑bacon fondue, and they’ve appeared at events like the Portland Hot Sauce Expo and Portland Night Market. When their Hillsboro restaurant opens in late fall or early winter, the cart’s standards—Greek lamb, chicken shawarma, and falafel—will be joined by signature offerings like the Bacon on Top of My Bacon (gyro meat, bacon, and pork belly with tzatziki and bacon jam), twisted fries topped with a choice of meat, cotija, queso, garlic sauce, Hot Cheetos, pickled red onion, and a pineapple–corn–tomato salsa, and the mango habanero chicken (habanero‑marinated grilled chicken finished with mango salsa, shredded cabbage, and cilantro).
