"Ampersand Calabasas is a big new restaurant in Calabasas known for its upscale ambiance. The restaurant plans to add 160 seats across a wide, U-shaped bar, dining room, and patio. The bar itself will seat 40 and act as a focal point, offering diners a view of the action throughout the place, including pizzas and animal proteins cooked in a wood-fired hearth, ice cream, and drinks. Chef Juan Carlos Olvera, formerly of Long Beach’s Sky Room, will oversee the kitchen. The restaurant is the latest venture by the father-son team Bernard and Jonathan Rosenson, who have a history of operating upscale venues in California.
