"At Sea-Tac Airport's Concourse D, I can expect Sam Choy’s Poke to the Max to open as an all-day, full-service dining spot with seating for 100 and the chain’s first-ever breakfast menu. Morning options that should please longtime fans include Hawaiian roll breakfast sandwiches, breakfast burritos filled with fried rice and a choice of bacon, chicken sausage, or Spam plus an egg frittata, and loco moco topped with sunny-side eggs available until 10:30 a.m.; lunch and dinner will feature the current restaurant menu from loco moco to Spam musubi along with cocktail offerings. The grand opening will include hula dancing, a Hawaiian lei cutting, and free samples. The concept emphasizes fresh ingredients and home-style ono grinds delivered in the celebrity chef’s signature way, and since opening in 2013 the proclaimed "Godfather of poke" has helped introduce poke and other island dishes to a wide audience; the chain has also expanded recently with a waterfront outpost in Kirkland and locations in Tacoma and San Bruno." - Gabe Guarente
