"A Hudson Valley bakery bringing its stuffed bagels to NYC this fall, the Greenwich Village shop will spotlight the signature stuffed bagel — a circle-shaped carb jam-packed with ingredients and heftier than those little round bagel balls — with bagel options of plain, everything, sesame, poppy, or onion and fillings like eggplant Parm, Buffalo chicken, pastrami, bacon-egg-cheese (with a vegan sausage iteration), and more; there are schmears for rip-and-dip-style dipping (popularized by PopUp Bagels) plus espresso drinks, and it comes from co-owners and married couple Jeremy Rhodes and Ali Chetkof Rhodes, who began selling their stuffed bagels via pickups, pop-ups, and farmers markets in 2021 before opening in Woodstock and adding shops in Kingston and Poughkeepsie." - Nadia Chaudhury
