"Opening in Concourse E on March 19, I found Juliett aims to be a sliver of Portland inside PDX, capturing the charm of the airport bar while fine-tuning it. The Lightning Bar Collective and Chefstable teamed up to create a circular, window-facing bar lit by small brassy lamps and five custom fixtures fanning out like the fronds of an asago palm, and the walls feature portraits by Sara Radovanovitch of aviators Berta Moraleda, Bessie Coleman, Micky Axton, and Hazel Ying Lee with brief descriptions of their accomplishments. Cocktails developed by Adam Ohlsson play off midcentury standards (Hanky Pankys, Hotel Nacionals, Aviations) alongside Latin- and tiki-influenced drinks—a Penicillin-style take with tequila and mezcal and cocktails featuring Velvet Falernum and pineapple—meant to evoke sunny vacation destinations. Beers made specifically for the bar by the new Fracture Brewing are all named for historic women in aviation (including The Night Witch coffee milk stout, the WASP West Coast IPA, and the Amelia Pilsner), and Oregon wines come from Coopers Hall." - Brooke Jackson-Glidden
