"A Montreal-style steakhouse inspired by Ottawa and Montreal that pairs prime cuts of beef with classic French-Canadian preparations and Southern-sourced ingredients. The menu leans on labor-intensive, traditional techniques and features items like Lyonnaise salad, sour pickles, and a tourtiere — a flaky puff-pastry meat pie filled with seasoned braised pork, ground veal, and ground pork, served with frisée hearts dressed in black truffle vinaigrette. Seafood highlights include an Ora King salmon pinwheel: the fish is flattened, layered with soft-cooked leeks, rolled, chilled, sliced and poached in a buttered seafood nage with trout roe, lemon and chervil for a delicate, buttery texture and striking presentation.
