"Opening today in Sorrento Mesa, this 12,000-square-foot brewery-restaurant is a large-scale project born from a partnership between Whisknladle Hospitality Inc. and an experienced brewing team led by brewmaster Skip Virgilio, a craft-brewing legend who co-founded AleSmith and created beers including AleSmith X. Aiming to put food, beer, and service on equal footing for the roughly 120,000 tech employees within three miles, the menu from corporate chef/partner Ryan Johnston and executive chef Keith Voight mixes elevated pub fare—burgers, wood-fired pizza, wings, and dirty fries topped with smoked brisket and barbecue sauce—with dishes like French onion soup, whole-roasted branzino, duck liver crostini, and bhel puri. Focusing on direct sales rather than distribution, the brewery will open with four collaboration beers made with local breweries, a handful of guest beers, and 13 house beers including the hoppy Beach Day Kolsch and the SMS Pale Ale from head brewer Tommy Kreamer; Virgilio is particularly excited to reintroduce lesser-seen styles such as the sessionable Brewers’ Best Amber and the German-inspired CTRL-ALT-BIER." - Candice Woo
