"Housed in an 18,000-square-foot production facility at 1225 Sixth Street in Berkeley, I see this Boichik Bagels retail shop and plant as the backbone of the brand’s Bay Area expansion: it debuts Friday, March 24 at 7:30 a.m. and will be open 7:30 a.m. to 1 p.m. seven days a week. The site centers on a bespoke bagel-making robot and a dough line Winston calls her “new baby,” a mesmerizing showpiece visible through a front-and-center window. The Sixth Street menu will be familiar — bagels, cream cheese, coffee, and bagel sandwiches — and while no shop-specific items are planned yet, the extra space finally allows Winston to relaunch the pastry program with black-and-white cookies, rugelach, challah, and a triple chocolate chip loaf cake (her ode to the Entenmann’s crumb loaf), with pastries made at Sixth Street and rolled out to shops across the Bay. The facility includes indoor cafe tables and an outdoor patio intended for events like mahjong, bridge, and chess clubs, features a new mural by Nigel Sussman, and was developed over at least a year and a half with over $1 million crowdfunded on SMBX." - Dianne de Guzman
