"Founded by Tokyo restaurateur Tomo Takahashi when he opened the first U.S. outpost in Studio City in 2010, the restaurant’s Japanese name translates to a historical samurai estate and community meeting point, reflecting its intention to be a lively neighborhood gathering spot. It has expanded to 29 locations across the United States and Canada, including two in Las Vegas with a third slated for Boca Park. The ramen-focused kitchen simmers broths for 10 hours and ages noodles for three days, offering 13 signature bowls with more than 20 toppings alongside Japanese tapas such as spicy creamy shrimp tempura, pork gyoza, and salmon cilantro sashimi, plus rice bowls and curries like a beef sukiyaki bowl and a Tokyo curry rice made with over 20 secret ingredients. Guests can customize bowls with pork, chicken, or vegetarian broths and opt for spinach noodles; the Las Vegas location at 7240 S.
