"Housed in Commercial Bay, Ahi (te reo Māori for “fire”) celebrates the produce and flavors of Aotearoa as imagined by revered chef Ben Bayly. The kitchen utilizes a sprawling off-site garden to produce dishes such as miso-barbecued octopus with papaya gazpacho or hot-smoked Japanese quail with garden seeds and mousetrap cauliflower (a take on the homey dish of toast topped with cheese and Marmite). Outside the garden, local foraged and fished ingredients take shape as the seasons change, like the kina (urchin) kilpatrick with pikopiko (mother spleenwort) ferns.
