"Colo’s understands that delicious soul food requires careful effort. Collard greens must be picked and cleaned by hand; the depth and tenderness of a pot of red beans and rice is directly proportional to how long it’s been allowed to simmer on the stove; chicken abides best by slow and steady heating methods. The desire to indulge isn’t always met by the desire (or know-how) to prepare this cuisine, but luckily, Colo’s is there to fill in the gap. The restaurant’s sticky fried ribs, juicy beef hot links, oxtails, and other chicken and beef options are locally sourced and halal-certified.
