"The hottest buzz in Downtown Seattle comes from the top of the Fairmont Olympic Hotel, where the honeybees of the on-site apiary are hard at work making a favorite ingredient of Olympic Bar’s chefs and bartenders: the rooftop honey. The bees are part of the restaurant’s Full Circle Soil program, a sustainable ecosystem within the garden that grows ingredients for the kitchen in soil fertilized by compost from the hotel. A syrup made from that rooftop honey is also one of the key ingredients in the Calling Blue cocktail, a cross between a gin and tonic and London Calling made with BOMBAY SAPPHIRE PREMIER CRU, fino sherry, lemon juice, and a spent coffee tincture made from used espresso grounds sourced from the hotel’s coffee bar. The hyper-local ingredients meet regional specialties on the menu in dishes like potted salmon with sweet herb coulis or the Olympic smash burger with Beecher’s cheese and bacon-jalapeño jam."
