"Opening Wednesday, June 12, I report that Dig Inn's Seaport restaurant at 25 Thompson Pl. brings the New York-based fast-casual chain—focused on seasonal and sustainable ingredients—to Boston's Seaport. For the first 100 customers it will offer free vegetables from its farm in Chester, New York; it will open serving Dig Inn’s spring menu and operate from 11 a.m. to 9 p.m. seven days a week. The menu centers on build-your-own “marketbowls,” which start with a base like brown rice or greens and include rotating seasonal “market sides” such as cauliflower or sweet corn, with protein choices like meatballs, chicken, tofu, and salmon, plus various soft drinks and some desserts. This location joins Dig Inn’s three existing Boston restaurants (557 Boylston St., 800 Boylston St. in the Prudential Center, and 277 Washington St.) and will compete in a crowded fast-casual Seaport scene steps from Sweetgreen, Chipotle, Shake Shack, and Flour; paperwork also indicates a possible future Dig Inn at 82 Mt.
