From Denver Beer Co. Comes a New, Mexican-Inspired Brewery | Eater Denver

"Planned to reopen this spring at 1635 Platte Street, Cerveceria Colorado will be a Denver Beer Co. spinoff focused on Mexican beers that highlight traditional ingredients and cross-border collaborations. Head brewer Jason Buehler is developing Mexican-inspired beers brewed with cinnamon, chile peppers, nopal, chocolate, mole, lime, and agave, and the brewery will work with Mexican craft brewers such as Cerveceria de Colima, La Bru, and Cerveceria Escollo; co-founder Patrick Crawford says Cerveceria Colorado is intended to create "a bridge, as opposed to a wall, in our community." - Josie Sexton
