"Billed as the city’s first cheese conveyor belt restaurant, this first U.S. location of the London spot is slated to open in early 2026, with a setup where customers choose primarily Northeast American cheeses paired with accompaniments—like Dazel Ash on a rosemary honey shortbread or a St. Ella goat cheese beside a square of Turkish Delight. Developed by Mathew Carver of the Cheese Bar, which began in 2014 with a cheese truck, it will be the fourth location after two in London and one in Berlin." - Nadia Chaudhury
