"I learned the Hill Country brewpub will have its last day of service on Saturday, January 20 at 13476 Fitzhugh Road; owner-founder Trevor Nearburg explained it must close not because of a single problem but due to “a confluence of social, cultural, and economic changes” that made the business “an unsustainable business.” They plan a final-day party and teased discounts and special beers. In production the brewery brewed a variety of styles—the Mexican lager Paz, the East Coast hazy IPA Trail Driver, and the pilsner Pibble—and its Wildcraft series used foraged ingredients such as Texas persimmons and honeycomb mushrooms. The on-site restaurant shifted over the years (starting with cheese boards and sliders, becoming Taqueria la Violeta in April 2021, and later evolving into the Beerburg Kitchen, which now mixes the two iterations), and the operation featured sustainable efforts like an on-site apiary as well as a beer garden, indoor taproom, and to-go beer; Nearburg opened Beerburg in January 2020 just before the pandemic." - Nadia Chaudhury
