"A Michelin-starred Lincoln Square restaurant helmed by chef Iliana Regan that is known for highly themed, rotating tasting menus (changing roughly every six weeks) — past concepts have included 1980s Nintendo, Wes Anderson films, and a revived “ugly fruits and vegetables” theme. During a summer residency the kitchen is being led by a James Beard–nominated chef who was given freedom to rework the menu; one standout course features long beans blanched in beer brewed with Cascade hops, wrapped in hop leaves, grilled and finished tableside with beef tallow. The 13-course dinner is priced at $150 per person with tickets sold via Tock, and the menu is adjusted throughout the residency based on what local farmers provide. There is some uncertainty about how a temporary chef swap will affect Michelin inspection, but the takeover is treated as a rare opportunity to maintain the restaurant’s adventurous, concept-driven identity." - Ashok Selvam
