"Located inside the Canyon Ranch Spa Club at The Venetian, this breakfast-and-lunch spot takes cues from old-fashioned apothecaries, emphasizing the healing benefits of ingredients and prescribed culinary “cures.” Executive chef Pete Ghione created a menu of nutrient-dense superfoods and adaptogens, and every dish lists calorie counts and whether it is gluten-free or vegan. Menu highlights include roasted cauliflower with a house-made Caesar topped by a chimichurri shrimp skewer; a Maine lobster club with heirloom tomato and crisp bacon; grilled aubergine with marinated eggplant; roasted portobello mushrooms; whole-grain banana and avocado pancakes; a chicken-avocado wrap; and a sesame-tofu spinach salad. Cocktails feature pressed juices, herbs, and organic/biodynamic/natural spirits, wines, and beers, and coffee is sourced from Caffè Umbria of Seattle.
