"Opened on June 26 to coincide with Phat’s sixth anniversary, the Woodlands outpost realized Alex Au-Yeung’s dream after his death: the James Beard–nominated chef’s partners Kevin Lee and Marvin He carried his vision forward to complete the 8,200-square-foot space. An LED-lit archway leads into a warm dining room lit by Chinese lanterns Au-Yeung designed, wood-framed booths, fiery orange and red accents, a stamped metal chandelier, a vibrant portrait of Au-Yeung by Chris Hernandez, and a Malaysian-themed settee that honors his heritage. The restaurant seats 194 across a spacious dining room, a 16-seat bar, a 75-person tree-lined atrium, and a 15-person Chef’s Table with a built-in electric Lazy Susan; the open kitchen reveals dedicated stations for roti, dim sum, and Beijing duck, two 40-gallon tilt skillets for large batches of curries and sauces, and an industrial potato peeler that handles 400 pounds every two days. Most of Phat’s street-food–inspired offerings remain—cult-favorite flaky roti canai, saucy rendang, satay skewers, sizzling egg tofu, and stir-fried noodles—and the team plans to expand the menu with Cantonese-style barbecue and Beijing duck, a bigger dim sum selection (steamed rice rolls, xiao long bao, har gow, siu mai, pork buns, lotus leaf–wrapped sticky rice), plus a full-service bar with beer, wine, sake, Southeast Asian–influenced cocktails (lychee margaritas, coconut espresso martinis) and small plates like salt-and-pepper wings, Malaysian tacos, and beef rendang burgers.
