"Hailing from the East Village, Beshock Ramen & Sake Bar debuted on Market Street in fall 2016 and is opening a Carlsbad location at The Shoppes at Carlsbad in early February. It has roots in Japan — co-owner Ayaka Ito’s family runs a restaurant in her hometown of Nagoya — and was founded by Ito with childhood friend Masaki Yamauchi. Yamauchi worked with Japanese architecture team Nonstyle to design the 1,750-square-foot space, which features sleek surfaces, industrial materials, graffiti-style art, varied seating from booths to higher perches at the sake bar and ramen kitchen, and an outdoor patio. Open daily from 11:30 a.m. to 9:30 p.m., the time-honed menu centers on a tonkatsu ramen whose broth base (pork, chicken, and seasonal vegetables) is simmered for over ten hours; other ramen options include spicy miso, creamy vegan, and chicken-based varieties. Executive chef Jason Tsuji also offers sushi rolls, rice bowls, and appetizers ranging from Nagoya-style wings and homemade pork gyoza to takoyaki and yellowtail sashimi. Ito, a certified kikizakeshi since 2014, has hand-selected a sake list that can be sampled in flights, plans to visit breweries in Hawaii and Japan to develop her own rice wine, and is adding a retail boutique of sake selections and drinkware to the East Village location." - Candice Woo
