Olympia Coffee Is Now Open in Columbia City | Eater Seattle

"In Columbia City, I visited Olympia Coffee's new Seattle flagship, which opened on Rainier Avenue and South Edmunds Street in a brightly lit 1,750-square-foot space inside a historic 1920s building. The shop houses a cafe, a training facility, and a community room for local businesses and nonprofits, and it follows the chain's West Seattle expansion in 2018 as its second Seattle-area location. I found the cafe currently featuring a mix of Ethiopian and Colombian roasts among its signature fair-trade coffees, and offering a rotating list of snacks (pastries, sandwiches, salads and savory items). They hope their process of caramelizing the sugars within roasts—resulting in sweeter-tasting brews—will help them stand out in a neighborhood with nearby competition." - Gabe Guarente
