"After more than 15 years of planning by Raymond Hook with partners Clay Jackson and Samantha Naik, this Armour Yards shop opens as a dedicated cut-to-order cheese retailer rather than a grocery counter. Led by a former Star Provisions cheesemonger, it offers world-class and everyday options including house-made mozzarella and burrata, charcuterie, and specialty pantry items. Upstairs are three climate-controlled cheese rooms—aged/hard, washed-rind/blue, and soft-ripening/bloomy-rind—engineered with a gravity-coil circulation system (no fans) that maintains humidity above 80%, plus conditioned anterooms devised with a Stanford PhD consultant to stabilize conditions. The selection spans Europe and America, from Sweet Grass Dairy and Oregon’s award-winning Rogue River Blue to an 11-year-old Parmesan aged in an underground cave and an exclusive Swiss cheese, while at least ten budget-friendly cheeses are kept at $10 a pound or $10 a piece or less. Retail also includes wine, beer, oils, spices, chocolates, and renowned Roldolphe Le Meunier butter, and an extensive e-commerce platform ships cheeses nationwide with producer, animal, and aging details.
