"Tucked into a tiny cubby inside an arts-and-gallery courtyard in San Miguel de Allende, this intimate tasting room seats only five to six people and was opened in 2016 to showcase a dedication to Mexican craftsmanship. The co-founder and CEO Bertha González Nieves often tends the bar, guiding guests through focused pours — from a crisp blanco to a vanilla-laden Añejo Barrel Blend and the signature joven sipping expression — while encouraging conversation and questions. The space is highly thematic: its contours echo the bottle design, copper-clad shelving evokes distillation stills, and tiles of obsidian reference the volcanic stone of agave terroir; a bespoke soundtrack of jimadors’ blade work is played to transport visitors to the agave fields. Sourced from Jalisco and hosting renowned mixologists in residency, the room aims to create a private, ceremonial tasting that feels both personal and deeply rooted in tequila tradition." - Brad Japhe
