"This flagship Amtrak lounge recently overhauled its food service to offer a more personalized, freshly prepared experience while dramatically reducing waste. Instead of prepackaged items, guests can build yogurt parfaits and choose from made‑to‑order breakfast items such as a pepper jack cheese muffin, avocado toast, overnight oats, and pastries from a local bakery; lunch and dinner offerings include street corn hummus, a grilled chicken ciabatta baguette, a Santa Fe chicken flatbread, and salads. Menus will rotate monthly and much of the preparation is done in the lounge’s kitchen, eliminating roughly 95% of plastic packaging and individually packaged products and replacing disposable service ware with china, glassware, and cutlery to reduce environmental impact." - Stacey Leasca
