Hurtigruten's New Culinary Ambassador Safeguards Sámi Food Heritage

"Offered across all of Hurtigruten’s Coastal Express ships, the Brygga bistros are becoming a platform for Sámi cuisine through menus developed by culinary ambassador Máret Ravdna Buljo. Dishes feature Norwegian ingredients with a focus on sustainability, local roots, and storytelling, and now explicitly highlight Sámi food traditions that have long been overlooked. Travelers can order items such as smoked reindeer souvas with flatbread and Bohccovuoivvas, a reindeer liver burger with lingonberry dressing, bringing flavors and ethics from reindeer-herding culture into a cruise ship setting, even as certain traditional elements like brain-prepared breads or tongue are kept off the commercial menu." - Karen Gardiner
