"Find us a better bagel in the Hudson Valley. That’s not a dare or a threat, it’s a genuine ask. We don’t think they exist. The sourdough bagels at Circles, located in the lobby of a coworking space in Hudson that could be LA, are on the bready side of the spectrum with an open crumb. If you opt for a sandwich (do this), it’ll be topped to the point of near-overload with spicy whitefish or shiso leaves, chili crisp, raw onion, cucumber, and whipped cream cheese. And somehow the bread pedestals stay sturdy all the same. It helps that Circles Bagels serves some of their sandwiches open-faced—no squishing and smushing.
