"Speak In Code in Deansgate is all the proof you need that Manchester’s creative rebelliousness is thriving. Here, the flawless (and, incidentally, vegan) cocktails are inventive and diabolically precise. The Manhattan-esque Demo 5 is a celebration of all things peach: lacto-fermented skins in a bourbon base, peach aperitif infused with peach wood and blossom, all off-set with earthy miso. And the non-alcoholic cocktails, like a lightly carbonated, salty bitter melon and honeydew concoction, are in a class of their own. Other than the slightly overwrought hip-hop theme, a nod to the founder’s music background, there’s not a misstep in sight.
