Like a play on al pastor with seitan in a buoyant vinegar-based sauce and finely diced pineapple. Or a tinga, heavy on the carrot, with notes of curry. Whatever fillings or combinations you choose, the street-sized tacos are easily cupped to eat with one hand while you hold your box in the other and browse around the market.
