At Ten To Sen, they’ve taken a similar approach but added ramen with both a vegan and non-vegan option. Focus on the vegan, which is like a wild garden bursting from the bowl—it’s topped with fried burdock, wood ear mushrooms, lightly tempuraed broccoli, baby corn, red onions, cashews, and watermelon radish.
