Customizations start with a half-dozen broth choices like dashi, spicy mala, and beef bone (the rich and tangy tomato broth is our favorite). For the meat options, go with AYCE or a la carte (sign us up for the unlimited ribeye). And this Japanese shabu-shabu gives you individual pots, so you can get as unhinged as you want at the buffet with fermented veggies, inari, rice cakes, japchae, and other options that’ll stretch the scoop of what you think of hot pot.
