The Cavatelli Project does one thing, and they do it extremely well - Review - Seattle - The Infatuation

"The Cavatelli Project is a bi-monthly, Thursday-and-Friday pop-up at Holy Mountain Brewing's Phinney Ridge taproom that combines the rollie-pollies in question with flavors from the American South. And not only does it highlight a criminally underrepresented pasta shape, but it serves the best meal you’ll have inside a brewery. (Cover your ears, innocent cheeseburger.) The menu is short but tight—like a round of Olympic shot put, or “California Dreamin’”—and since cavatelli orders aren’t taken until 4pm, it’s best to pop in early with a group. That way, you can shoot the sh*t and grab a preliminary beer or glass of floral riesling before pouncing. Just know that The Cavatelli Project typically sells out within a couple of hours, so consider this a kind of early dinner you’ll need to plan your entire life around. It’s worth it. We don’t make the rules. Food Rundown Smoked Brisket Ragu Here’s a prime example of the Italian-Southern balance in action, and it plays to win. Smoky-but-not-too-smoky pulled beef is lovingly tempered by a briny little dollop of mustard seeds, and parmesan ties everything together. Everyone in this little paper tray has a job to do—cubes of buttery gouda provide relief from salty shards of crisped ham, red peas soaked in mustardy dressing are satisfying, and every so often, a snipped herb shows up to keep things interesting.
