"This long-standing ode to Aveyron flies a kitschy flag, thanks to stone walls, checked tablecloths, and massive copper saucepans full of the stretchy mashed potato marvel known as aligot. The rich, cheesy mash rightfully arrives at nearly every table, either alongside a richly flavored, chunky sausage or a simple green salad with a zippy dressing. Service is aloof at best and full-on antagonistic at worst, and unfortunately, it’s anyone’s guess whether you’ll get to witness the artistry that is serving this stretchy side dish straight out of a copper pot or if your plate will simply be slammed down in front of you, potatoes already dolloped in a welcome mess puddle.
