"Ramen Cowboy feels like the kind of off-the-beaten-path ramen spot you might wander into on a powder-chasing mission to Japan, only to discover the best ramen of your life. The stark simplicity of the space might lead you to think Ramen Cowboy doesn’t take itself too seriously, but one slurp of their housemade noodles (made with locally grown and milled flour) in Tonkotsu broth slow-cooked for 18 hours will rid you of those suspicions. Share a couple items from the “snack” portion of the menu, but save room for the main event: ramen, available with pork, mushrooms, or short ribs. The drink menu is a delight and features a Sake Capri Sun alongside other low-proof cocktail options.
