Stationed daily at an empty parking lot in Echo Park, the mobile trailer’s lights glow its name in green, white, and red lights like a Vegas sign. Peek inside and you’ll see a wood-burning pizza oven that used to operate from an old pick-up truck back when the business launched in 2019. Outside, folks are milling around waiting for their 12-inch Neapolitan-style pizzas that come out quickly with a blistered, chewy crust while others are already enjoying theirs in the trunk of their cars.
