Sit at the eight-seat chef’s counter for the best view and access to a special type of pickled ginger only served at the bar. It’s also where you’ll dig into a $210 menu that consists mostly of pristine nigiri, plus small plates like toro tartare with caviar and uni or caramelized miso cod.
