"As the name suggests, this food truck parked at Project 9 Brewery combines taqueria classics with Korean flavors. Not everything’s a winner, but if you order wisely, there are some tasty bites that go well with the brewery’s crisp hazy IPA or tangy fruited sours. In particular, the “al paskor” (gochujang-marinated pork spinning on a trompo) is the truck’s best protein, especially piled into a cheesy taco with tart kimchi. The meats come to life further with a huge variety of bits and bobs via the self-serve salsa bar, like pickled daikon cubes, cucumber salad, or chipotle-gochujang sauce. No need to go out of your way, but if you’ve already posted up at Project 9, safe to ditch that sad sandwich from home. photo credit: Aimee Rizzo Food Rundown Kimchi Gringa Taco Melted cheese and kimchi go together like classic coming-of-age movies and railroad tracks, as evidenced in the gringa taco on fluffy flour tortillas. Order these with the “al paskor” and spoon on some pickled daikon. Vampiros Taco We appreciate the textural symphony of this crispy corn tortilla loaded with a blanket of caramelized cheese. Top this one with kalbi asada, soy-soaked cabbage, and as much cucumber salad as you can pack in. Korrito If you love gochujang, this burrito is riddled with it, and you’ll be a happy clam. Just know that the whole thing trends pretty sweet. Gogi Fries While it’s hard to screw up cheesy loaded crinkle fries, the kimchi-spiked queso here gets lost in a sea of strong pico de gallo.
