"Gubat translates to “forest” and is appropriately set in a lush open-air garden. The hidden-in-the-woods ambiance sets the mood for rolling up your sleeves and digging into the messy fun of a kamayan meal, or the quintessential Filipino dining experience of eating with your hands. But here, the simple but well-done grilled and fried ulam (main dishes) come on individual banana leaves, served with adobo rice and the fiddlehead fern, tomato, and salted egg salad known as pako.
