"Celebrated as the 2025 MICHELIN Guide Vancouver Exceptional Cocktails Award winner, Good Thief brings vibrant Vietnamese flavors through mon nhậu (Vietnamese small plates eaten while drinking) and a modern cocktail menu; I find the cocktail program whimsical — and, as co-founders Vincent and Amelie put it, “Whimsical, inventive and super sexy!” Bar Manager Vysion Elter is a true visionary, crafting cocktails that creatively showcase a Southeast Asian heirloom ingredient with fresh, global technique. My ideal meal there would start with whelk, tartare and octopus paired with the Jules bel, move to pomelo salad or zucchini with a glass or bottle of Chavost, continue with pomme frites, oxtail and duck alongside a bottle of Scouts Gew-Cab, and finish with Kiko’s desserts and a couple ounces of Calvados. I also appreciate the program’s sustainability efforts — beef fat from the sister restaurant is used for fat-washes, citrus peels become cordials, pomelo fibers are dehydrated into a powder rimmer, and composting is prioritized — and there’s a thoughtful nonalcoholic option in Meadows, a de-alcoholized, botanical bubbly from Pamplemousse Jus and Dominion Ciders." - The MICHELIN Guide
