Impeccably cooked rice, moist tender chicken, melt-in-the-mouth salmon, juicy red tuna, firm seabass, spicy miso sauce dusted with fresh garden herbs, last-minute grated wasabi and a knockout selection of sakés (the sommelier and partner knows his business).
