Choshoku Kishin weaves together the format of tea ceremony cuisine. Guests choose a rice bowl, then select from an assortment of soups. Rice is doled out little by little, so you can experience the change in flavour as steaming progresses. Accompaniments include whole dried round herring and pickled veg.
