Chef Márton Irtó, 28, preserves tradition while enhancing it with modern techniques and thoughtful plating—think goose liver with sour plum sauce and millet shaped like a Chinese roll—and he’s baked more than a thousand versions of túrógombóc in pursuit of perfection.
