Chef Interview: Kenny Atkinson, House of Tides, Newcastle, UK

"Set within a beautifully restored, Grade 1 listed 16th-century merchant’s house on Newcastle’s historic quayside, I run a laid-back, family-run restaurant where my goal has always been to serve top-quality food without the trappings of traditional fine dining. We learned quickly that lunch services weren’t right for us, so we phased them out and moved to the tasting-menu format we serve today. Our close-knit team—most of whom have been with me since the start—works like one big family, developing new dishes by first confirming with suppliers that we can source enough of the ingredients, then finding a wine to match, and finally tasting together so everyone has input." - The MICHELIN Guide UK Editorial Team
