There’s just one sitting (which starts at 8.30pm), so make sure you arrive on time to avoid unwelcome glances from other diners! Here, the owner-chef is inspired more by the traditions of Kyoto rather than Edomae, hence the prevalence of dishes prior to the nigiri courses, including an excellent miso soup and a creamy “chawanmushi”. For the nigiri, this chef uses high-quality local fish caught by trusted fishermen, while the rice is the Koshihikari variety from Niigata, famous for its excellent quality.
